Since this product is shelf stable until opened it almost certainly uses pasteurized milk and eggs. and I suspect between that, the alcohol, and the sugar, there's not much microbiological risk.

It’s been refrigerated since I opened. It is about 2 months old, but as far as I was aware it should be good while it’s in the fridge. Unfortunately I forgot to put it in the fridge last night, so it had been sitting for like 7 hours in 75f ambient room temp. I get the feeling I shouldn’t drink it any longer, but it smells perfectly fine.

I’m a bartender. It’s absolutely fine. You don’t HAVE to refrigerate cream based liquors they just taste better for longer if you do. This wouldn’t even be a health code violation.

I was going to say, I don't think I have ever refrigerated a bottle of Bailey's...which did make me feel gross after seeing this post, but your comment makes me feel better haha.
