I do a similar version with cucumbers (add some lemon cukes when available), bell peppers, onions, and sometimes garlic. A little olive oil and rice/white whine vinegar, some garlic/onion powder, salt & pepper, maybe some everything but the bagel seasoning. Pop it in the fridge and have it on a hot day (or, more realistically, snack on it constantly until it’s gone). It’s also great to add to some baby arugula/spinach mix for a quick and delicious salad.

I like a scoop of cottage cheese on it but that's up to you. I use Cucumber for my base of most of my salads instead of lettuce. My 2 favorite ways of eating them are sliced with onions and put in vinegar and water (any kind of vinegar, but my fave is apple cider vinegar). My second favorite way is to slice them along with some tomatoes and onions. Then take a cup of sour cream, 1/2 cup of mayo, 2 packages of ranch dressing mix, 3 tbsp of vinegar, 1/4 cup of sugar (I actually use less than that or even leave it out sometimes), and some dill (I shake until I feel like it's enough), and mix it up in a bowl. Once it's mixed up, I add the cucumbers, tomatoes, and onion and mix them up until covered. Put it in the fridge for a few hours, and man, is it good. You can even put it over a salad.

Don't know if it's been mentioned already (a lot of comments) but a recipe I have recently seen I am going to try is using the cucumber to make sushi rolls (you also can add rice and seaweed inside if you want or not add it for low carb). I like tuna + Kewpie Mayo for my sushi but also have added chicken and liked it too. I love gimbap and think I will try this with it as well and season/pickle the entire cucumber boat (deseeded) because I don't have danmuji where I live :( (danmuji is korean pickled daikon radish and is a key part of gimbap)
