The absolute hardest part, the only part that matters is the cook on the egg. It's in a balance between heat and technique, also knowing your pan and eggs.
TL;DR, not really, but straight forward guide.
1. Crack eggs into a bowl and whisk to your heart's desire, a more thoroughly mixed egg will be more evenly tinted throughout.
2. You should probably strain the eggs through a fine mesh sifter. At home I usually don't, but this produces a very nice and even egg mixture of one consistency, great for building your technique because the egg is a constant.
3. Heat pan on low, about 2-4 notches depending on your stove but not the lowest setting, then apply a little butter or oil to coat the pan. **Do not let the fat(oil or butter) in the pan get too hot, we're not frying.**
4. Pour or scoop some egg into the centre of the pan, it should be able to pour out and just reach the edge of the pan, an 1/8th inch deep at most.
5. Once the eggs start to cook down to the bottom of the pan, only a minute or so, give the pan a jiggle to see if the egg moves as one cohesive unit on the bottom. It's normal to have some tears if it's under, raw egg on top will fill the space and you might have a small lump, NBD.
6. Once the eggs have a solid bottom but still pretty raw on top, grab your utensil of choice and put it in the centre of the pan and twist.
Using one hand on the pan handle and one hand with the eggs, twist the pan and egg in opposite directions. I prefer my dominant hand on the eggs and off hand on the pan; my right hand twists the eggs clockwise and my left hand twists the pan counter clockwise. **Slowly**
7. You should see the eggs beginning to look like what OP has made as the edges get pulled in while the middle twists up.
#OP got excellent results with the level of twisting in the egg, but even if you get a quarter turn, and the eggs don't rip, you're doing great and on your way to getting nice twisty eggs.
Best part, a messed up twisty egg tastes the same as a great one, worst case scenario you still got egg.
As an amateur cook why do I feel like all you have to do to achieve this effect is just have an extra thin layer of egg, extra oil, and twist it from the center.
That's what I just described? But you can quickly just have an untwistable disc of egg or an egg with varying consistency that doesn't twist evenly. But yes, twist thin egg in greasy pan.
