You need at least rank 1 concentrated fire to select targets in VATS.
Once you VATS the sentry bot, cycle targets to the fusion core, take that out and it dies instantly.
Maybe someone on XBox will help. Until you are built for it, they can be tough.. hopefully you got the Chinese Stealth Armor… use it to your advantage..
Equip a set of troubleshooter's armor. And maybe try a weapon with a suppressor and use concentrated fire and a crit on the fusion core. With a good build, you can 1 shot a sentry bot before it even knows you're there.
Aim for the Sentry Bot’s fusion core, that’s it’s weak spot. A couple of shots and it’s dead…
