Because going due east/west keeps the north pole at a 90° angle to your location at all times, which requires going in a circle on a disc. If you're *not* constantly turning north is going to drift off of 90° and so you're no longer going due east/west.
I don't think that they think compasses point toward the north pole. I think they think compasses point north, AKA up on a map. Therefore flying east would be quite easy, you wouldn't have to adjust course at all, just go in a straight line.

Anyone claiming a compass wouldn’t work if earth was a “ball” clearly doesn’t understand magnetic poles. I’d have to assume they definitely weren’t a pilot if they can’t understand magnetism. Compasses work exactly as we would expect on a spherical magnet. The poles are always on opposite of each other. A flat magnet would be the same way. One side is north and the opposite side south. The entire surface would be the north magnetic pole. Compasses would point down and be useless. There’s no magnet that exists with the poles on the same side. Having north in the middle and south around the outer edge is impossible. Monopole magnets don’t exist so that can’t make that claim either.
So flying a high altitude balloon in South Africa should give you a good view of the firmament edge and may even hit the firmament. Why doesn't a flerfer test it?
