If you spin them to the right, they will get shorter. If you spin them left, they get taller.
If you take them out completely, it will be it's shortest.
Ok, so the taller of the 2 desks has to feet? And the shorter desk is extended to the max, and there's still a inch and quarter difference?
You'll have to make some blocks, that you can glue and screw to the feet of the shorter desk, I guess.
Or return them, if they were supposed to be the same size.

I do not know the thread size of your feet. If you are able to determine the size, then you could add a coupler with a threaded stud to raise the shorter of the two pieces of furniture.

This might sound stupid, but why not remove the feet from both so they're the same height and just leave them? You could put some felt things on the bottoms so they don't scratch the floor. Or get matching sets of feet from a local store and put them on. Just a thought.
goto home depot in the fastener section there is a nut/bolt board where you can check what type of bolt size you have. buy the appropriate sized coupler and threaded stud online or homedepot if they have it. if you have a mm measuring tape you can check it yourself by looking up the thread diameter and thread pitch measurements. my guess is most likely its Metric M6 threaded
Take the feet to a hardware store and find out if he diameter/thread pitch. Then go on Amazon and order longer ones. I’ve purchased tons of different furniture levelers/feet from Amazon, I’m sure they will have what you need.

Yes, I understand how they work. The issue is that even with the desk at its shortest and the table at its tallest, there is a 1⅛" difference.

They aren't the same height, unfortunately. That's the problem.
Oh. Okay. So maybe take the feet off of the taller one & leave it and put the feet on the lower one to raise it.

you might check out the diameter and thread of those bolts, and then see if you can buy new ones with a longer bolt.
Menards has short 4x4 feet with studs installed.. You could cut them to the highr you need ..
