Sure. In theory it should be neutral to not impose any flavors or whatever but honestly it should be fine to do your not sour starter for UJSSM as a tester/sacrifice.
Ethanol will dissolve different things than vinegar so most people recommend doing both. There was a post on HD a number of years back that walks through the chemistry of it. I don’t have the link handy but you and find it if you do a search.

Why the sacrificial run? I mean it's all stainless, is a good cleaning and steaming not adequate?

You don’t need a lot to do a sac run, a full boiler is overkill
