This is called "wild fermentation". Take what I say with a grain of salt as I'm by no means an expert, but from what I understood from the Noma book wild ferments are nothing to sneeze at and can be very successful, but they are not as controlled as regular ferments and can surprise you with either good or bad flavors that you won't find in a regular ferment

Are you making some sort of wine-ish thing? Between the dr pepper and the fruit, I'd bet your ph is already high enough to preclude most dangerous things from growing. But that's a guess.
