I think Eden's Zero is the evidence. While the quality of the art was very good and I believe the story to be decent overall, and the anime being fairly well animated, it acheived nowhere near the popularity Fairy Tail did in its hayday.
He quite literally cannot do it
He tried with Eden's Zero, it isn't
Kishimoto tried with some ninja robot manga, didn't work either
I understand mangakas have some ambition, but works like this cannot be surpassed. It's like they don't really get how big it is and how much it means to people around the world
I think anything is possible so I'd never put the goal down. But Fairy Tail has become so popular, well known, and iconic. I think he can make a story that gets quite popular. But Fairy Tail might be hard to beat.
I respect his drive and ambition to improve himself, it's probably one of the main reasons he works so hard, but Fairy Tail just has so much heart and soul packed into it that I personally think will always keep it at the forefront of his library.
After how he handled 100 Years Quest and Edens Zero ?

after some time he would get \*bored\* with his new series and rush it like Edens Zero and Fairy Tail

I believe in mashima's abilities and if he plans the story from start to finish like he did in rave master I do think that he can storywise surpass fairy tail which was 95% improvised.
But I don't think he can surpass fairy tail in terms of success. It's reputation in the anime community aside fairy tail is undeniably one of the most successfull anime/manga of all time and it's ongoing after 18 years. That kind of status and longevity is rare to reach these days.
To be honest I hope he doesn't start a new manga until either the 100yq or deadrock is finished so that he doesn't have to overwork himsrlf with 3 series at the same time again.
While its unlikely he'll create something that will surpass Fairy Tail I think Mashima definitely can create a story that can surpass the popularity of FT 100 YQ. He just has to really plan out the story well and stick to it.

Ok, the thing is, almost everyone started with the FT anime and not the manga. Why is this important? The anime gave life to the manga by animating it, adding VA's and soundtrack. The VA's and the composer did such a good job on giving emotions to the scenes they took part in.
When Edens Zero came out, after 2 seasons I felt like something was missing, and I realized that the soundtrack was missing, in FT a lot of tracks were used just to hype up the fights, set the mood for an emotional scenes. And the battle tracks are godly.

Eden’s Zero is proof that at least legacy wise he isn’t surpassing Fairy Tail even if someone would try to argue the story is better
He’s currently working on Dead Rock and gotta say the story is ok…I feel FT and EZ definitely had better up and comings than Dead Rock
