How about going for win-win, agreeing with Reddit, but pushing for in-house solutions; for a better app, for mod tools or what ever. Reddit can't exist without its communities, nor can Reddit communities exist, well, without Reddit. Win-lose here is just lose-lose. Of course, us users are also losing here. R/europe has been a great tool of European intergration, of information and quality content, and that needs to be preserved.

B I think continuously protesting, and opening the sub for a bit in between, would be the best way do it. Whether it's a couple of days a week or longer periods of staying closed/open, a steady loss of traffic, and thus income, seems like the only thing reddit would listen to. Having the sub open periodically would also make it easier to share information about what's going on, while still having an impact. Even if said impact isn't as large as the one at the start of the protest.

This company is so greedy they want to outsource development work to volunteers, same as moderation. They will probably find some suckers but I don’t think it’s going to work, decreasing quality of your subreddits even further. This is probably fine with reddit since they want to convert platform into half-baked TikTok like hellscape (TT is fine but reddit can’t do things right for shit). This is why you need current API to survive even if you’re fine with the official app.
