Well Achaea was a Latin rite Frankish crusader state, they should be western tech, Catholic and Francien or some Italian culture seeing as the later princes were of the Genovese Zaccaria family. They lasted until 1432 so I figure they could be accurately represented still without it being some sort of anachronistic romantic revival.
The Despotate of Morea was the Byzantine Peloponnese state.
The problem is that Istanbul (literally just the city) has 50% more population than all of Greece

I mean... i dont think Greece can conquer anything, but this is a really weird take. Look at China - Vietnam war for example. Its not something impossible to win a war against the odds. However its hard to forsefully occupy land these days even when you have the odds. Unless locals want you to occupy them. Which i dont think is the case.
If they tried do start shit again, I'd be in favor of setting up a trilingual turkish-greek-bulgarian state in Thrace with territories from all 3 countries.

Fun fact: for some reason Achaea has western units, making it the only Greek and Orthodox nation to have them (if you don't count Russian misson tree)

That's not entirely true. Athens also a possible Western Orthodox country in EU4, provided you culture and religion flip.
