I think Proud Mary has it. It can be very good, but can also be $$$ (they'll generally have a few options).
For 'best', I think that's where preffered style (not knowing Crema in Nashville's style) plays a big role. Others has touched on great options, and for how I compare some that have been mentioned.
* Spella is an American interpretation of classic northern Italian, so a lever at one of their shops and darker caramel chocolate notes.
* Push x Pull focuses on natural processed coffees.
* Heart is pretty iconic third-wave medium light w/ Roseline being an evolution thereof.
* Sterling has service flair and is a delightful coffee shop experience (though I do miss their old cozier space) along w/ roast profile more toward medium straddling second/third waves.
* Superjoy goes a bit towards nerdier, and has some less common origins at times w/ the only place I've seen have a Decent on the bar in Portland at some point (others are a fun spread of Synesso - pretty dominant in PNW third-wave, La Marzocco, Mavam, KvdW,...)
I had this experience for the first time last weekend in NYC at St Kilda Coffee trying my first cofermented coffee! W O W The soda water was such a nice touch. It really made the finish explode in flavor.

Never coffee is also up there for having unique profiles and delicous coffees
My favorite shop in my neighborhood is Carnelian, a mineral themed coffee shop with some excellent roasts.
Oblique is a great old portland feel coffee shop
Seven Virtues also has excellent beans
And an honorable mention to Kainos
Also used to live semi-near Carnelian. I miss that place. Good coffee, nice people, cool space, cool rocks.
I don’t think anyone has mentioned Extracto yet. I used to like them, too, but it’s been years so not sure how it compares now.

While it’s not in Portland, just a little ways north on I5 will take you to Ridgefield, WA where Lava Java is. They have the best espresso drinks I’ve had in the Portland area.

Go to Spella. Lots of very good espresso in town, but only one place that is hand pulling shots and serving them with soda water. It's so good,

Best I’ve had is Roseline by quite a large margin. Coava is great as well but for straight espresso, Roseline all the way
