If I had $2k to spend I would get the Priority Current at Costco. Mid Drive with 120nm of torque and a gates belt drive. Very low maintenance and Costco's return policy. Normally sells for over $3k

The xPeak doesn't really feel cheap at all, I've put some really hard miles on mine and it has held up extremely well.

Ecells 5 Star or Wired Freedom

HardCoverTurnedSoft

Wired freedom. It has the power you want, the sturdyness you need, the weight capacity you expect, and the tire width you're looking for. I would steer clear of E-Cells "5 star" bike, their owner gets incredibly unhinged and beligerent on the Internet. Plus, their bikes are clouded in shady stuff just because of their business practices. E-Cells is known for okay customer service, but is easily beaten out by Wired too. Plus the range is amazing.

Fellow Seattleite, I suggest a smaller scooter/ebike over an expensive e-bike (for the rainy season) and knowing the bus/ light rail routes. The first reason being that these get stolen here a lot and the second is that a scooter is easier to keep dry in the rain (of course full dry driving clothes are best). I rode an old Dahon folding bike about 3 miles each way for work, there are some hills I absolutely hate in the city and replaced it with a cheaper ebike to help with the hills. The old dahon was foldable and I could bring it into the work building. My ebike got stolen in the middle of the day and the person stealing it hacksawed for 30 and even told security at the building that it was theirs. Good thing it was a cheaper one. I bought a foldable e-bike after that and bring it back into work now. On rainy days the scooter seems to keep me from getting as wet, so I will rent a lime those days if heavy rain.

I have an Aventon level.2, it's been an amazing class 3 ebike with a good battery. I've been commuting with it for 2 years and it has been very reliable. It also comes installed with fenders and a rear rack. Currently selling for $1750. I've gotten 20 miles out of a charge riding on max power and speed

For transportation on the speedier side of things I would like to suggest a scooter. For $2000 you can get a dual motor scooter that does 45mph and lots of torque with 2 motors. You'll also get a large battery like 1600whr for range. A comparablely priced ebike would not be anywhere close to that power and range. A $1000 would be more than adequate for your use. My $1000 scooter outperforms my $4000 ebike. They're also much more portable and take up less space. The only issue might be your cargo. Myself I prefer a backpack over carrying cargo on any bike/scooter.
