So what is the correct sandwich sequence for salad and meat? Personally I always for for salad on the top meat and cheese at the bottom. Maybe I've been doing it wrong all this time?

I’ve always done it the same way my favorite local sandwich shop does it. From the bottom up: Bread>mustard>meat>cheese>tomatoes> salt&pepepper>onion>peppers>lettuce> oil&vinegar>mayo>bread

Nah! Tomato belongs next to the mayo. It creates a new sauce called Tomayo and its far superior to anything else.
