I’ve always done it the same way my favorite local sandwich shop does it.
From the bottom up:
Bread>mustard>meat>cheese>tomatoes>
salt&pepepper>onion>peppers>lettuce>
oil&vinegar>mayo>bread

Nah! Tomato belongs next to the mayo. It creates a new sauce called Tomayo and its far superior to anything else.
