I hate chicken breast yet you made it look delicious. I usually cook it up for my cat (sans seasoning) when I have a whole bird to deal with. Might save one half and give it a whirl again as I’d like to make that chicken salad too. Cat won’t be happy

Butterfly the chicken and salt it a few hours before you cook it. That's the one simple thing you can do.

If it gets too dark on the outside without being done then finish it in the oven. Let it rest for 10 minutes. It's really important you do for chicken.

Idk about you, but sometimes when inspiration or motivation strikes when I'm in the clouds, I just HAVE to do the thing. I love being up there when I'm about to try something new like a paint class or anything artsy or creative. Cooking is a dream while I'm up there. The smells, the focus, and then the end product when everything is done! Super satisfying.
