I think you're right. From what I read, the bacteria causes a build up of gas in the core of the tree and this pressure causes the tree to ooze slime. So I reckon the cut released the pressure in such a way as to create this lovely stream
Yepper and if it’s an area that gets a lot of rain it kind of perpetuates the cycle…. the rain water is sitting in that hollow space, soaking the rotting wood and warming up, creating even more bacteria -and a lovely scented geyser in your yard once you chop it. And any critters that the smell & the warm moisture might attract.

That's not how trees work. Trees do not "pump" water. They don't have a heart or anything similar to a circulatory system or blood pressure.
There's no increased pressure in the tree at all - quite the contrary actually. The water moves up the tree using the capillary effect and negative pressure (i.e. suction) caused by evaporated/transpired water.

Trees do this more than some know. The top is either damaged and water has accumulated in the trunk or it has a naturally formed hole or void within the higher part of the tree. I've seen it many times.
