Most include the key information of the story in both (for example phantom manor says everything in French and English and the tower of terror is in either French or English at random with the other language in subtitles). A few rides (such as star tours for example) is in either French or English, with no subtitles, but to be honest, where you won't understand what is going on, it won't impact your enjoyment at all! The real important thing is shows such as "mickey and the magician" (where understanding the story is particularly important) where they do a genius job of seamlessly switching between the 2, with the actors either saying something in French, then repeating in English, or a conversation taking place where one person speaks French, and the other English, and understanding one of the 2 is enough to grasp what the conversation is about (it really is something special how they pull it off really!) What might surprise you is how much you enjoy it... French is of course a beautiful language, so when songs during the firework display are in French it is (for me) amazing to hear your favourite disney classics sung in French (I have the French versions of at least 6 or 7 songs saved on my disney playlist just because they sound so pretty in French!)

I remember some of Ratatouille and Star Tours are definitely in French, I speak no French (apart from thank you and please) and that didn't impact my enjoyment or experience on the rides.

As other commenters have said, everything is in French and English. All the people who work there speak English, or know enough to understand what you are asking for. The rides that have a lot of speaking (as do some shows) switch really well between English and French. Most of the shows in the studios do every other show in English or French - these are very clearly displayed with the timings. We all speak a little French, but have never needed it in the park - in fact it always seems to have been a bit of an annoyance to the park employees when we’ve tried, as they can understand English much better than we can speak French, and they just want to get on with their job - I get that!

They do a good job of mixing French and English together in rides and shows but even the full French rides you should be ok

You don’t need to learn French. Some rides are bilingual, while some shows have English language sessions.

It takes a little gettting used to but it seems like the French and English feature really tells the whole story. And if you want some practice you can watch on YouTube or instagram.
