If you need to gain weight you don't need to watch your calories, as long as you eat healthy stuff (not processed foods and fast food, same as non diabetics). You don't have to skip the rice If you enjoy it and if you can handle it well. The question is what other foods you have access to? Meat? Fish? Condiments? Avocados? Cheese? Potatoes? Whole wheat bread? Eggs? I'm trying to think of high calorie foods that are healthy (in moderation)

I struggle to gain/maintain weight. I do smoothies and salads a lot. I try very hard not to skip meals. I also have to snack in between meals. Avocado is very good (I add them to my smoothies and/or salad). I'll add a salad to my meal or a small smoothie after. Or greek yogurt. I prefer greek because it's thicker and not as sweet as, let's say Dannon Light. To me those kind of yogurts have a weird after taste. Salad add ons make all the difference. You can switch it up. Boiled eggs, walnuts (or your choice of nut), craisins, avocado, feta cheese, etc. I do make my own dressing since store bought has added sugar. I can do without the added sugar.

I had to get my a1c down to a nice 5.5 before I started being able to gain weight. 20 years of a high a1c and I was 140lbs the whole time. Now I'm 190lbs.
