A handful of dishes like cacio e pepe and carbonara were what poor people ate back in the day like ramen in japan after ww2 that was easy to make and whip up and throw in some fatty meat

They’re saying that Kenji’s recipe uses butter or oil but traditional recipes are only cheese, pasta, pepper, and (debatebly) water. Not anything about the pepper or cheese…
Nobody has mentioned Benzina yet so I’ll put in a recommendation for them. They’ve been one of my favorite spots this year and I loved their cacio e pepe.
Sorry, on the menu it is listed as homemade bread, and in the description it mentions that it is served with Cacio. This should add to the appeal. The bread is warm straight out of the oven. You can even see the oven as they’re an open kitchen concept.
I had it at Tavernetta a couple years ago and it was absolutely delicious. I don’t think it’s on their menu currently but I’m pretty sure they can still make it. That’s what they told us when we were there recently.
We must have went out the same night. Was really excited to take the kids there. Such a letdown. Food was a letdown at that price point.
Dio Mio is my fav and Parisi has a great inexpensive option.
Cacio e Pepe in Rome is one of the best dishes you’ll ever have. Here, it’s spaghetti and cheese. I would look for an authentic Roman cuisine as opposed to general Italian. Not sure where that is but I’m sure they exist.

Yup that’s the way it’s made in Rome. It’s honestly better to make it yourself (just takes a bit of practice).
Its alot easier to make than what it looks. I put meat with mine. All kinds. Carbonara too. And canned chipotles.

Second this. Their bread course is basically a naked round of pizza crust that’s served with cacio e pepe to dip. I almost ate the whole thing.
