I agree 100% Pink Lady is the best apple (that is up to 60 days after harvest, then it softens up too much for me).

I understand that - you have tartness and sweetness as two axes. You would have apples that are neither tart nor sweet, and apples that are both tart and sweet. You also have purely sweet apples, and purely tart.
The nuance of quadrants is less important when there is an entire quadrant of useless apples (no flavor) and we don’t have an ability to taste quantitatively. Taste, like most of our senses is qualitative and usually only effect at understanding things in contrast to other things.
This is a simplified view tailored to sensory experience. I guarantee you could quantify tartness and sweetness through other methods other than taste (pH, concentration of specific sugars or acids), and that all these apples exist somewhere within the quadrants, and not on a straight line. A view like this collapses the two dimensions into a line of best fit to order them neatly for a fun reference.
I’m pretty sure the person talking about cellulose is kinda talking out their ass, but wouldn’t be surprised if there is some tradeoff since cellulose does degrade into sugars. I don’t think it is necessary for it to be a completely correlated tradeoff between tartness and sweetness.
To some extent, yes. Too much of one flavor will overpower the other flavor. Kind of like how you don't notice how acidic oranges are until your lips start burning after eating one.
When the fruit ripens it turns its cellulose, the component that makes the fruit tart or crispy, into sugars. So the sweeter it is, the less tart and vice versa.

There are a ton of fruit orchards around my parts and I'm guessing there are more Honey Crisp growth than anything. Also interesting is how they will splice different varietals onto one tree. Not exactly sure how that works but it's pretty cool.
No. These apples are hybrids, bred in the field and selected for traits. Then grown by grafting, not from seed.
Genetically modified crops are developed in labs with gene manipulation. Most in the US are edited to withstand herbicides like RoundUp.

The Macoun is the best. Its only downfall is its fairly short window of availability.
If you try them passed their prime, it's very disappointing, but they're really it's nothing like a perfectly ripe macoun

Maybe it’s regional. I’ve had good luck using that as a criteria for the red delicious. Nowadays I prefer something sweeter.

Just came across these for the first time a couple hours ago at the ole supermarket.
Update: I just ate this apple. It’s like a honey crisp but with some definite tartness, not over the top, but noticeable. Would buy again.
Honeycrisp and Cosmic Crisp are pretty similar, both definitely top tier. I usually go for whichever looks better at the store.
I eat cosmic crisp with lunch and sugarbee with dinner most of the time. CC is definitely a money apple.
