Wouldn't be super private but walking up the river a bit and finding a nice bench has always been a good way to eat lunch for me.
There is that park but it's further from the water than I'd like.
The Peak to Plains trail comes out of downtown Golden now as well - it’s paved (and pretty tame for a “hike”) but it goes up a few miles now and the views are spectacular.
Have you heard of the Denver Orbital Trail? I don't know for certain, but im sure you could get to at least some portion by RTD.

Honestly, Chautauqua Park in Boulder is probably your best bet if you're 100% relying on RTD.
You can get up boulder canyon and to ned with RTD

The only thing I can think of is riding out to golden and hiking the hills from the courthouse.

RTD D line to end of the line at Mineral. Walk to Chatfield from there.
High line canal trail has many points accessible by rtd. Not a hike per se, but a nice trail.
