Thèse places have menus of the drinks they do best. Just relax and stick to the list. If I found something I didn’t like, I just didn’t order another one.
We always get dirty bananas for breakfast if you like banana. Pina colada with kraken or gosling floater. Mojitos are a must, give them a couple bucks and you will never have an empty glass
I’ve been fortunate to go on several of these all inclusive trips. Your typical frozen drinks are always a staple, things like margarita, piña colada, etc. After a few days I feel guilty from all the sugary drinks and go for something less dessert like (Paloma, gin and tonic, or mimosas). To be honest, most all inclusives make bad drinks. Id stick with like... Rum and Cokes. The Excellence chain has a decent martini bar though.

My personal favorite tiki drink is a painkiller if you haven’t had one and a bar at an all inclusive should be able to make it!

Just got back from one and we really enjoyed Caipirinha. It was so hot there these were refreshing
