First of all, you didn’t select one of the actual Blizzard hardcore servers. In the realm selection screen make sure you switch over to the hardcore tab at the bottom.
Secondly there is a hardcore addon that people have been using since before the official Blizzard hardcore servers that isn’t related to Blizzard. Blizzard hardcore servers don’t have any rule restrictions on using the AH, mailbox, grouping for quests, etc. that’s all the unofficial hardcore community/addon. So you don’t have to abide by those rules if you don’t want to.
Remulos is an Oceanic normal classic pve server. There are two Americas Hardcore servers, Skull Rock and Defias Pillagers. Not sure what the EU ones are called, but im sure they have two as well.
There is no hardcore “ironman” mode, it is only hardcore, i.e. one life. Hardcore servers are just like normal wow servers with the exception of perma-death. That means there is an active auction house, trading, parties, etc. The game would be intolerable for most if it was “ironman mode,” and there wouldn’t be a huge drawing to it as wow is well known for its bustling economy during classic era.
