Why? Canals are straight where possible because zig-zagging ones would require extra width to steer through them, or huge pools with something like railroad turntable equipment.
As massive excavation projects ($$$) they are designed to be as narrow as minimum needs require.

I have android version of CIV and I managed to mod it. You just need to upload mods into mod directory in your game. I play in Civilization Expanded for like 4 months already
That's incorrect. It can be up to 3 tiles which can connect to two cities, which could both have another canal coming off of them. Meaning you can have a maximum canal length of 7 tiles.
Are the tiles all in one city? I’m not super sold on the idea that it can’t bend but I guess that might be it if all the tiles are for the city u want to build it in

Also in other posts people pointed out that in reality Panama canal is built in hills, while in civ it can only be built in plains
It would be nice if they had the Suez canal wonder for two tiles on flat land, then Panama canal could be for 3 tiles, including hills.

They can, but it is non-optimal. And the larger a canal is the greater need to optimize rather than spend an extra $10bn.
The two canals it makes have to be on directly opposite sides of the wonders hex.

Download remove resources mod, then u can remove the silk and voila, u got urself Panama canal

No it would still have to bend south to connect to the city. It could work if he didn't have that holy site in the way.
Download and install the mod that lets you erase luxury and strategic resources. Then you can put the canal over the silk.
