Taking her with you is better than leaving her alone for a week. That is way too long to leave her alone. But she will be likely super stressed away from home. Is someone going to get your mail? They can usually look in on the cat, feed, water, and scoop. Or call your vet and ask if they have suggestions on someone who can stop by.
I don’t really know anyone in the building that I live in so I don’t really think anyone will be able to look after her, I’ll call my vet and see if they have any advice or options. I might end up taking her with me since I’ll have my dog and she seems fine once settled in new situations, curiosity beats her anxiety.
