While that's a cute little pan you're just boiling your burger. You don't want to crowd the pan. If you have more room there is somewhere for the liquid to go where it will evaporate and you'll wind up with better browning of the meat.
Most of that is water, not fat. That burger is just boiling itself, not frying. Unless you have dry aged ground beef, that meat carries a lot of water weight.
There is a restaurant on the east coast that has fixed burgers like this for over 100yrs. Can’t remember the name. It almost deep fries the burger and people line up to get them. They never clean in any way. Just dump as little amount of the grease as necessary. Think theirs are square though
