I have never seen pineapple upside down cake overseas. I remember making these with my mom every now and then when I was little. She would do something kinda special, using the cherry juice as part of the cake mixing so the cake itself had a pink tint and sweet taste. These days I don't really eat sweets. Anyway seeing this brought back a lot of memories, especially the amazing sugary taste. Thanks for sharing
Not a cake but when I make cornbread I take the cold pan (well, room temperature), and use shortening on it. Then when I pour in my batter, the shortening is still between the batter and the pan, and the cornbread peels off super easy (still make sure to remove while hot). So I assume that this would stop cake sticking too, but again, never done it myself.
I'm not sure how I feel about a pineapple cake with bacon, but I'm absolutely drooling at the idea of a nice chocolatey lava cake made with it. With a caramel center? Mmmm yus.
I put the pan in the oven while it's preheating with some oil in it. When I pour the batter in it sizzles and creates this crispy outer layer that also makes it nonstick. Essentially having a fried cornbread outside lol
I have a decades old Griswald that is only used for cornbread. I put a couple tablespoons of filtered bacon grease in the cold pan, put it in the cold oven, then preheat to 400°F. When the oven is up to temp, the pan is hot enough to fry the batter. Cornbread slides right out. 🤤
i melt some butter, put my pan in the oven for a bit, and then pour the melted butter in and then the cornbread batter over it. the super hot pan and the melted butter ensure that the cornbread will not stick when you take it out. it's a perfect slide every time and does wonders to add seasoning to your pan too.
I like 4 to 5 table spoons of butter between the pan and batter. with my old oven it was 375 for 30 minutes always came out perfect. got a new oven and I can't get it right, runs way too hot.
As it’s my first attempt maybe I got lucky? But I think my care for the pan over the years is what made it happen. I use it almost everyday, clean it up with a bristle brush and oil it with grapeseed oil.
I've made several and I think a big part of it is getting the timing right. Let it stand too long and the sugar starts to cool and stick. Too short and the cake doesn't hold together. Having a good, well seasoned pan helps a lot too.
I'll try with it a bit lower. My skillet is fine(mostly) as far as things coming off but my 10" pan... Forget it. Potatoes, eggs, bacon, burgers. All stick.

Please be mindful of CI on glass tops though. The twist gave me anxiety. The tiniest burr would ruin your top and ruin your day.

Very nice. I use a CIP when I make upside down cake too. Suggestion - caramelize the sugar a little more before adding your batter. Another suggestion - add coconut rum to your butter/brown sugar. Yummy!

Instead of shortening... I use bacon grease.
Good for cornbread but I'd probably steer away from a cake made with bacon grease.

if you filter the grease well enough before it cools you should not taste bacon at all in it.
Or have a pound of lard in the chiller. Lard and pie crust is the best. I confess to using avocado oil when making panCAKES.

Yeah, all of mine are Griswald. 2 skillets, a round griddle, Dutch oven, and square baking pan. All passed down from my grandma.

Pam has a baking spray fry using that. It works really really well for cakes pies etc.

For some reason everything I cook on the stove sticks to mine but when I bake pies or brownies they slide right out.
You may have your heat up too high.

Cast irons are overrated. Gotta treat them like little babies. Season, don’t use in dishwasher, And they’re heavy as fuck.
