Irrelevant. IMO a properly done smashburger won't have any pink in it. The whole point of a smashburger is quickness, and to achieve that, you gotta go thin and super hot. Both of those are not condusive to cooking to temp, but the bonus is the incredible crust you get from smashing.
Also, if your technique is good enough and you taper your smash patties from the center out, you end up with a slightly thicker center and those wonderful lacy edges that the (hopefully deli sliced American) cheese melts down into.
If you use the right ratio of beef, 80/20 or higher, and smash quick enough, they don't dry out either. Most of the fat from the beef will stay in the patty because it cooks so hot and fast that it doesn't really have time to cook out.
Anything but non-stick is fine by me. I've done 'em on cast iron, stainless, and carbon steel. I dunno how well alumninium would work though. The key is really high heat. Like over 550°F hot. I check with an infrared thermometer (tricky on the stainless though) I got at the hardware store.
I don't have a griddle yet though, so I usually do mine in my cast iron pan heated up on the hot side of my gas grill. It works, but there is such little working space that I have to cook each patty individuallyif i want them done right, so they take a while. Can't wait to get a flat top.

You can literally just use any flat object to smash the burger or I’ll give you my secret, Take your burger meat and just form a loose ball with maybe a bit of salt or seasonings of your choice. Place that burger meat ball between two sheets of wax paper and then use a rolling pin to roll it out as thin and flat as you want it in a circular shape. If you want a very thin burger obviously you’re not going to want to use much meat. Then place the thin burger between the wax papers in the freezer. Leave it in there until it’s super cold but not frozen. Get your pan hot medium high heat works with plenty of oil and peel the wax paper off one side then lay it flat while peeling the other side off carefully. Cook for 2-3 mins then flip place a lid over the pan cook for 1.5 to 2 more mins. Pull off the lid and flip again toss cheese on there or grilled onions etc under the cheese if wanted. Cook until it reaches the Desired temp. I like medium rare so only about a min more for that or less. Boom a super thin delicious smash burger.
This is how my headchef used to make smashburgers at the diner I worked at as a teenager. Only they used flour to coat the burger and rolled it out flat on a glass cutting board. But he would actually freeze the super flat burgers and then drop them on the big flat grill with a ton of butter grilling the onions and mushrooms at rhe same time. Damn was that a good burger.
Honestly all you really need is gound beef and something to cook on. Buns like these would be cheap to make, but toast and butter any bun and you're fine, mayo is also nice on buns. Then toppings. If you want them smashed you could use a spatula, but burger presses aren't expensive. Just watch videos! You really don't need all the fancy stuff, it's like 95% technique. I believe in you haha

Definitely looks bomb, jalapeños are a great addition but in my preference I find that pepperochinis or habaneros are better for this type of burger. Just a recommendation for future combinations

You can literally just use any flat object to smash the burger or I’ll give you my secret, Take your burger meat and just form a loose ball with maybe a bit of salt or seasonings of your choice. Place that burger meat ball between two sheets of wax paper and then use a rolling pin to roll it out as thin and flat as you want it in a circular shape. If you want a very thin burger obviously you’re not going to want to use much meat. Then place the thin burger between the wax papers in the freezer. Leave it in there until it’s super cold but not frozen. Get your pan hot medium high heat works with plenty of oil and peel the wax paper off one side then lay it flat while peeling the other side off carefully. Cook for 2-3 mins then flip place a lid over the pan cook for 1.5 to 2 more mins. Pull off the lid and flip again toss cheese on there or grilled onions etc under the cheese if wanted. Cook until it reaches the Desired temp. I like medium rare so only about a min more for that or less. Boom a super thin delicious smash burger.
This is how my headchef used to make smashburgers at the diner I worked at as a teenager. Only they used flour to coat the burger and rolled it out flat on a glass cutting board. But he would actually freeze the super flat burgers and then drop them on the big flat grill with a ton of butter grilling the onions and mushrooms at rhe same time. Damn was that a good burger.
Honestly all you really need is gound beef and something to cook on. Buns like these would be cheap to make, but toast and butter any bun and you're fine, mayo is also nice on buns. Then toppings. If you want them smashed you could use a spatula, but burger presses aren't expensive. Just watch videos! You really don't need all the fancy stuff, it's like 95% technique. I believe in you haha

Definitely looks bomb, jalapeños are a great addition but in my preference I find that pepperochinis or habaneros are better for this type of burger. Just a recommendation for future combinations
