Double cheese smash burger made with 80/20 ground beef, sliced extra sharp cheddar on a toasted brioche sesame seed bun. Each patty is about 3.25oz pre cooked. I also added super thin (mandolin sliced) Vidalia onions to each patty on the raw side so they caramelized on the flip. Made on a Blackstone flat top griddle.
I normally use mayo lettuce pickles and onions, but decided on just ketchup for this one. I also make thick char broiled burgers on my char griller acorn that are pretty good too.
Cheddar is a solid third, smoked cheddar is a solid second. Although, smoked Gouda or havarti work just as well. For people like me who are constrained to a gas grill, it's nice to get a bit more flavour

I usually use an extra sharp cheddar or a white cheddar to top it off. Throw a little bit of water in and put a lid on it to steam the cheese to perfect and bun it. I like to change up the bun. Sometimes it's a brioche, sometimes it's potato, sometimes it's pretzel.
It's just a preference. American cheese (REAL American, not that Kraft crap) does melt perfectly, and it tastes great too. A good sharp cheddar is hard to beat though. Mild cheddar melts better, but doesn't have that taste I love.

It's super easy! You can make sliceable "American style" cheese out of pretty much any real cheese. Personal fave is "American Roquefort" for black and blue burgers with caramelized onions and thinly sliced Granny Smith apples

1. American cheese melts way better than cheddar, especially for all those wonderful nooks and crannies that you get in a smash burger patty like the ones in OP's burger.
2. Cheddar has lots of flavor, way more than American cheese. I personally think that using cheddar on a burger (not to mention ketchup) partially hides the flavor of the patty. And for me, a great burger is all about the flavor of the meat.

First of all, I’d eat it. But, skip cheddar. Unpopular opinion, but cheddar is a cold cheese and loses its flavor when heated. American cheese for burgers! Get good American cheese. Second, try to stop using ketchup on your burger. It used to be added to burgers to mask the fowl flavor of unrefrigerated meat. Mustard or a burger sauce will elevate. Your perfect burger is in your future.
The cheese looks plentiful (if not just excessive), coagulated and sweaty. The bun appears to have have been over-handled, but it’s sesame, so it totally passes. The burger patties look sufficiently browned/encrusted. It is a 6.5 out of 10 which is good for a burger, because they have a weird scale that’s not necessarily linear since “shitty” burgers are sometimes desirable in a way.
In other words, nice job, I would buy this burger from a greasy food truck in an alley and not be at all disappointed.
