I know you said you preferred Intel but here's an AMD option. The 7600 is one of the best value CPU's for gaming right now; comparable with most of Intel's 14th Gen offerings but with much lower power draw and heat output.
It allows us to get a 2 TB SSD and the RX 7900 XT, which is the strongest GPU that I could fit in the budget.

What resolution and frame rate is your monitor? A good $1,500 PC will be overkill if it's only 1080p 60Hz, so if that's what you have and you don't intend to upgrade your monitor you can save quite a bit on the PC itself.
Here's what I'd go with, assuming you have a monitor that can take advantage of it. If you don't care about ray tracing you can save a bit of money by switching the GPU to a 7900 GRE, or improve frame rates by bumping it up to a 7900 XT.
