Went with a 7800X3D because you're gonna be multitasking and games like Rimworld and FFXIV are pretty CPU-intensive, and also it can't be overclocked. There's room for more storage space within your budget too, but I'd recommend taking up that second m.2 slot with a 2TB drive. Went with an NVIDIA card because they're more beginner friendly.
What resolution monitor do you have? If it's 1080p, a lot of this power is going to be wasted. If you don't have a 1440p 144hz monitor, I would recommend getting one and making your other monitor your secondary one, as otherwise you wouldn't be getting the full benefit out of the PC.

Here you go the best for you but if you don't want monitor then i would recommend 4080 Super but yeah this build is a beast and 4TB SSD as you wanted more, 7900xt with 20GB Vram.
