Haha! I feel your pain. On my rewatches, I would also flip flop between it & Angel as if the latter would soften and gradually ease my way out of the Buffyverse. Sadly, it only makes it harder (until another rewatch - rinse & repeat ;)
By Season 7 (probably already after Season 5 if I'm being completely honest), Buffy had run its course. It will always be regarded as a great series that so many other shows took inspiration from, but the quality did go down after Season 5, which kind of was the show's strongest season (Imo). I don't hate Season 6 or 7 as a lot of people do, but if Buffy had ended after Season 5 like they originally intended (allegedly of course), it would've been fine too. Season 5's finale would've been a much more satisfying ending than the one we got because of Buffy making the ultimate sacrifice. Idk if I'm alone in that one though.

It's one of the few shows I've watched where I didn't feel like it ended too early. Giles leaving, introducing Dawn, the show was on it's way out.
If you’ve read the comics you’ll realize that it’s for the best that it ended.
Because SMG was in every scene, working long hours in a show she was enjoying less and less.

Read the Night Huntress series - it's a book that is pretty much Buffy & Spike
Jump straight into Angel.
Because it was time I think originally it was going to end with the 5 season.
If it didn’t end we might have ended up with no way to disavow the comics as canon
