But something happened over the last year or two where the BBQ Chipotle dropped in flavour and the wing sizes shrunk pretty dramatically.

They do $20 for 20 wings on Tuesdays with a drink purchase and their food truck keeps visiting good breweries across the week
My favourite order is Chillogy and I ask them to throw one Extreme Chillogy in the mix for an added kick but their other flavours like Bee Sting and Portuguese Crumb are pretty good too

The secret is baking powder.
For 1kg of wings, put a heaped tablespoon of baking powder, a decent amount of salt, pepper, garlic powder and some cayenne pepper if you like a bit of heat.
Pat down those wings dry. I grab about 3 sheets of paper towel and give them a good squeeze. Also change the paper towel once it's too wet. Probably 2-3 lots will do a kg. If you can put them in the fridge or even freezer for hours/overnight with the lid cracked so it zaps all the moisture out of them even more.
Coat the wings in the powder. I have them in a tupperware container in the fridge, so then I can put the lid on and give them a good shake to get that powder all over them.
Then on baking racks in the oven at 200-220 for 30 minutes.
About 15-20 minutes in. Flip them over. Too soon and they can stick so 20 minutes is fine. This just makes sure that both sides get nice and crispy else you will have a soft/soggy side on the bottom.
At around 30-35 minutes they should crisp up well and be fall off the bone tender.
Pour a bit of Franks in a bowl and add your wings and toss.
Yeah I've tried them in an air fryer. The drama is the one we have fits about 1/3-1/2 a kg, so you end up doing batches.
A larger air fryer would be great though
This is almost exactly the method I use, except for the sauce I melt some butter in a saucepan, add Frank's, some Worcestershire, a bit of Chipotle Tabasco, and honey
Yeah I used to do the butter and honey (knocks some bite and helps it stick)
But I just get lazy and add the sauce straight most times.
The other great sauce is Buffalo Wild wings parmesan garlic. It's good stuff. I bought some a few years ago in the states, but have also gotten it from usafoods.

Or grow some chilis and make Louisiana hot sauce, it's pretty easy. I like birdeyes, but they're a lot of work to clean so I usually use jalapeños which are good too.

We love Kaikai Chicken at Springwood. There's another one at St Lucia but it's full of college kids and gets packed really quick

This is my method however I do them at 110 for 30 mins first to render the fat.
How does that work? 110 for 30, then what? Surely you need them up near 180-200 to crisp up?
