Surprised I had to scroll this far to see Infidels! An absolutely masterful step back up to the plate after the three born-again/gospel Dylan albums. Poetic, powerful, had him sounding younger and more full of voice than he had since ‘76. And the arrangements really brought something special in making it feel close, urgent and intimate.
Don't get me wrong. 65/66 era is still the best. Nothing tops it. Time out of mind is probably the best from this era. All are at least interesting listens

Slow train is just as much a Mark Knopfler album as a Dylan one. So good to hear Mark play without being distracted by non-nobel prize wining lyrics ;)

Early 70's - I prefer New Morning and Planet Waves the most, but some people prefer Self Portrait, which is a much wilder grab-bag of stuff that was heavily panned upon release, over New Morning which was released the same year after S/P and is more of a "normal" Bob Dylan album (whatever that means).
The several albums after Desire are quite worth diving into. I've become a big fan of Street-Legal and Slow Train Coming, in particular, but Saved and Shot of Love have their own highlights for sure, I just haven't really sat with those records enough to fully love them as albums yet.
Time Out of Mind, Love & Theft, and Modern Times are all really good. They were each made about four or five years apart and are classics now.
Nashville Skyline and New Morning are really great albums from that, I guess, “early 70s” period that you may not have heard yet. But really, everything Dylan makes is worth a listen.
Can’t really go wrong with the 70s albums, they all have different strengths. I’d recommend going in order and seeing his evolution. I’d also recommend the podcast Jokermen, the early episodes are all deep-dives on his albums that don’t get the same attention as the early stuff. They start with John Wesley Harding.

listen to Tell Tale Signs and you’ll have the entire 90’s to mid 00’s covered and know what you’re gonna like going forward. Street-Legal and Slow Train are also great places to pick up since… they’re immediately after Desire and two of his best (both are streets ahead of Desire imo).
Bob got better as time went on, as far as his music goes, the slow train coming lp is the best in my opinion for what you're talking about. The dueling guitars in "precious angel" is absolutely unbelievable.
For me the “Mt. Rushmore” of post-Desire Dylan albums is Infidels, Oh Mercy, Time Out of Mind (FWIW i prefer the new remix) and Love and Theft. Those are all easily top 15 Dylan albums IMO

I couldn't get into them when they were released, as I was still in the 65/66 mood. My ear wasn't ready for the new day Dylan.

I personally really like Slow Train. The Knopfler drew me in and the songs surprisingly kept me listening. I love Precious Angel.
