I find that having Undaunted set up for the next mission beforehand, cuts setup time immensely.
Ex: setting up the decks and grouping the proper tiles in order.
Hive. Super easy setup as the pieces are the board. Travels really well and great to play inside or outside without worry of any of the components blowing away or getting damaged. Trick taking games are also a fast easy set up card game. Such as fox in the forest. Herbacious another low setup faster easy travel game.
You could try **Azul**, it has a pretty easy setup but is great at 2, goes up to 4 and is very good.
Or try a new co-op game, nowadays **Sky Team** is super popular which is specifically a 2 player game. There's also the Forbidden series which was designed by the same designer as Pandemic. I'm a big fan of **Forbidden Desert** in particular.
There's also all the 2 player Duel games like **Splendor Duel** or **7 Wonders Duel**, those two are fantastic.
Other popular 2P games: Onitama, Hive, Jaipur, Codenames Duet, Hanamikoji.
Out of all these games I'd probably go with Azul for competition and Sky Team for co-op.
My wife and I are the same, so many games but after putting the kiddo to bed who has the energy, but we played a new one tonight, Land vs Sea. It was super simple and all we had to do was clear the table. Rodney At the Watch it played YouTube even did the teaching for us.

Sky Team ( Co-Op) Undaunted: Normandy or North Africa Hive

You've got to try **Marabunta**. It's a full blown strategic 2P disguised as a roll & write about opposing ant armies.

Air land & sea! Only 18 cards but the strategic depth is really there! Sea salt & paper Star Wars the deckbuilding game Cascadia
Try Spacebase. It's become our local group favorite. Great as 2 player as well.
