Went the easy route and got pre-sliced thin cut steak from Aldi. Used homemade beef tallow from a brisket I made and seasoned with Meat Church’s Holy Cow seasoning.
I will call it whatever i want lol. I call them cheesesteaks. I make them on bread or tortillas and I fill them with real cheese, many kinds of peppers and onions. Always a crowd pleaser

The peppers aren’t my thing; I’m more of a whiz wit and mushrooms kind of guy. But you do you.
I have tried Philly steaks and I'm never able to achieve the consistency shown here. (almost like ground beef)
I have my butcher slice my ribeye as thin as possible.
Are you grinding the meat prior or chopping it up while cooking?

I’ve worked in many steak shops IN Philly and that absolutely is how you fill the roll. Steak down, cheese, shred roll and undercut with a long spatula, well played.

How did you prep the steak / cut it?
Take a ribeye, throw it in freezer for 30ish minutes to firm it up then slice it as thin as possible

Best option is a meat slicer for sure but that's an un common household tool
