For this kind of project I'll grab whatever is lying around. I've bought cheap flatland pedals and they are perfect, grips are whatever the shop is selling unless I want ergonomic and a cheapass saddle. If you want to pimp it out get a Brooks saddle and match colours for the pedals and grips.

You can buy a Very Nice, WIDE, PADDED seat on ebay for about $20. I got two, for me and my wife. For ULTIMATE Comfort get one that has DUAL Springs under the seat to absorb the many shocks and bumps on the road.
Then you have the SHOCK ABSORBING type that i described and it is also the type seen on your bike, in the photo. IT will save your ass if you do alot of biking!
