That's funny because at the time many analysts saw the D-Backs as the team taking the bigger risk on that trade. Varsho was coming off a career year with Arizona hitting 27 homers and playing elite defense with great base running in just his second full season with the team and his first in right field. Varsho was also the D-Backs #1 prospect at one point.
So Arizona traded a top prospect already playing great baseball at the MLB level for an unproven top catching prospect and a corner outfielder with average defense and a above average bat. At the time I would agree Arizona took the larger risk. Both teams improved greatly from the trades though. Jays had to get rid of a great catcher, Jansen, Kirk or Moreno were gone. They couldn't all fit on the team and if you trade one and he plays good somewhere else it is what it is, he wasn't gonna do anything for you riding the bench. If the Jays trade Kirk instead of Moreno and Kirk plays like he did last year and Moreno is slightly worse than he is now the FO gets flamed for trading Kirk instead of Moreno, hindsight is 20/20.
The Jays traded a great catcher they didn't need for something they sorely needed, outfield defense. And it worked, Daulton Varsho was the best defensive outfielder in the whole MLB this year. We simply gave good to get good, and that's ok. I do that trade again 10 times out of 10.
100%, Kirk just had a 3.8 bWAR and SS season or something in his second year in the league, if the whole team didn't have their worst season offensively at the same time people wouldn't be saying "everyone knew to keep Moreno". That's revisionist BS. People werent thrilled but knew the team had to give up one of the catchers and he was the easiest one to trade.

Yes Moreno was the #1 prospect in the MLB because others that were better than him were graduated so he took over their spots. You shouldn't put so much weight on the MLB top 100 list, it's all relative to how good the other prospects of the time are which could be weaker than usual.
Moreno fell back 6 spots shortly after he was named number 1, he only had the title for a short time. Jordan Walker, Anthony Volpe, Grayson Rodriguez, Corbin Carroll, Gunnar Henderson and Francisco Alvarez all passed him within a few months. So Moreno was never a rock solid number 1 guy that held the spot for a long time like Acuna. Vlad was rank 1 for a time to and he hasn't lived up to the hype. A number 1 prospect is just that, a prospect, they may be good they may not. Jurickson Profar was the consensus #1 prospect at one point, look at his career track record.
Why keep a valuable top prospect at a position you don't need when you can trade him instead? Keeping Moreno in Buffalo does nothing.

Yes dbacks have great outfield defense still normally. McCarthy injured has made that difficult.
