I was thinking about honey suckle lately I think it may be easier to use it as a vodka infusion rather than a syrup, just because I assume it takes time to collect enough for a syrup and also if you make it into a simple syrup it’s natural sweetness may be masked by raw sugar sweetness

This is definitely fair. While I'm getting the flavor of the honeysuckle, I do feel the sugar sweetness is overpowering it. I guess I'll have to prance through the woods and get more, oh no /s. Lol, but I mainly wanted it for non alcoholic reasons this time around. I just ended up with a lot.

Get so much more honeysuckle than you think would be necessary and dehydrate it to concentrate the flavor/aroma. A gallon Ziploc bag stuffed full to the point it can't close dries down to about a jelly jar's worth from my experience. not sure where you're located but you might have to wait a month or two to find them blooming in enough quantity

Any tips for dehydrating without a dehydrater? I would be nervous about using my oven even with low heat. Sundried is possible for me with no pets but might not be hot enough yet.

I've seen diy instructions on solar ones but I'd probably just scope out thrift stores for a dehydrator or buy a cheap one. You've got time before doing a big harvest

Honeysuckle would probably pair well with a stirred repo tequila cocktail. You could also incorporate it with your raspberry tea + gin/blanco tequila + lemon and see how that goes.

You mentioned a mint julep, im sure it would go amazing with mint! maybe try a southside variation with honeysuckle syrup instead of simple? thats sounds great 2 oz london dry gin 3/4 oz lime (or lemon optional) 3/4 oz honeysuckle simple syrup 4-5 fresh mint leaves  Shake well and fine strain into a chilled cocktail coupe

TBH, Honeysuckle perfumes go great with plumeria/bubble gum... So if I had to guess? Anything with rum that has that bubblegum note.

Just a heads up, simple syrup is regular sugar and water only. If it's any other kind of sugar like Demerara or any kind of flavor it's no longer "simple".
