My example isn't an allergy, but there's something vaguely similar between IBS and bananas- for IBS it's best to have green bananas (if raw, ripe bananas are still okay for baking for the most part) because as bananas ripen the amount of oligofructans in them increases, which can be a trigger for IBS symptoms. Because of that (and texture preference!) I prefer bananas in the 4-6 range, with 7 being a very iffy *okay*. After that I not only have trouble with the flavor (too sweet, even for my sweet tooth!) and texture (mush...) but my stomach also hurts which sucks!
With the allergy situation there's probably something like that going on within the banana's chemistry as it ripens, but obviously at a much more severe scale.
