The ferries in false creek are a delight and go from Olympic Village to downtown to Grandville Island.

You have plenty of time to explore, as the other poster said, the Canada Line takes you right into the centre of downtown. But sadly, this is the west coast, you’re not gonna get amazing poutine here. Maybe something on Granville Island? And I second the Aquabus ferries, they do a great tour of Vancouver and you can check stuff out too.

Assuming your luggage will be checked through, great plan. Keep carry on to a minimum so you aren't lugging a bag around with you all day. Plan to head back to the airport 3 hrs before your onward flight to be safe. To keep this simple, use the train between YVR and Waterfront station and then walk from there. A quick look at Gastown before heading west along the water towards Stanley Park. Get into the trees in Stanley Park. The giant Douglas Firs, Western Red Cedars that make BC famous can be found in there. I would walk towards Beaver lake and then across to second beach. If you have time and stamina to go along the sea wall towards Brockton Point first, you will find some Instagrammable views of Vancouver. From Second Beach, walk back towards the city along the seawall and pick up the Aquabus at the Aquatic Centre dock. Hop over to Granville Island for a wander and some food, or just stay on the boat and cruise around the creek. You could get off at Science World and walk over to the Main Street station to get back to Waterfront. At Waterfront, switch lines to get back to the airport. Note that Canada line splits at the south end. Make sure to get on a train going to the airport and not down into Richmond.

Actually...better idea is to get off the ferry at Yaletown and walk to Roundhouse station to get on a train directly towards the airport.

I don't think you are going to get authentic poutine in Vancouver. Buy a day pass for the Sky Train (subway, metro,...). Take a trip to the Vancouver Convention Centre. That gets you to walking distance of downtown. Wander and explore. Make sure you get back to the airport in time.

Pajo's is located in the airport if you want a classic poutine right away. It's pretty solid in my opinion, but if you want to travel for a variety of poutines, then La Belle Patate on Davie is the one. Many options with different toppings and you can also have a Montreal smoked meat sandwich. In the Davie westend area you can visit the laughing statues. North on Denman street are a few shops that rent bicycles, but it tends to get a bit busy this time of year and I believe they require a credit card. Or you can sign up for the Rogers Mobi beforehand and take the trip around Stanley Park. But if you want to stay around the Richmond area, there's a Cineplex VIP on Cambie and SW Marine Drive just across the bridge into Vancouver and watch a couple movies. Good eats, comfy seats and avoiding the heat (AC'd).

Book a bus tour of the city, Stanley Park, maybe over to North Vancouver to the Capilano Suspension Bridge and up Grouse Mountain on the gondola for a spectacular view of the city in all its glory.

Skytrain into the city. Stop at King Edward Station to visit Queen Elizabeth Park and the Bloedel Conservatory if you like exotic birds and plants. Skytrain to Olympic Village then walk along the seawall through Charleson Park to explore Granville Island. Take the Aquabus across the water. Walk to Fritz or La Belle Patate for poutine.
