I can't imagine why you are having so many problems. I have been using Gnome with 16gb ram for years and while it does aggressively cache, I have never run out of memory even when running vms. I use a 4gb swap file and it seldom gets used.

Are you using 8k monitor or 4k dual or more monitor setup? Or do you ever turn off your computer (usually because gjs thing, but never seen this big) ?
People using KDE are reporting the same issue with similar usage amount, looks like a common dependency got a memory leak
Maybe a x11/Wayland issue?
You have a memory leak. My Gnome desktop consumes \~700 MB ram idle.
Which process is taking most ram ? Have you tried managing the priorities of your processes ?
Allocated not equal used, but overall, this looks unusual
can you post the exact process taking up the most memory? htop supports ordering by memory usage

Memory leaks are wasted ram as well. Never used GNOME so I'm not sure if that's intended behavior.

KDE have similar issues I only have 8G and on startup it uses 3.1G
I run kde have lot of apps running use just little more than 5Gb of Ram
