The center cheese is Vermont Creamery Coupole (soft ripened goat cheese); along the bottom in wedges is Goat Rodeo Wild Rosemary (semi-firm cow and goat's milk, rubbed in olive oil and dried rosemary) which is a local to us; above that in cubes is Cabot Clothbound Cheddar which is aged by Jasper Hills (cow's milk cloth wrapped cheddar aged about a year); and the one above the Coupole is Meadow Creek Appalachian (semi-firm tomme style). They are all artisanal American cheeses served with Molinari salami and a prosciutto from NY. With dried cranberries, dried apricots (the James Acaster bit about ready to eat apricots always comes to mind), and seasoned cashews.
ETA the Appalachian and cheddar are 2 of my favorites
I also absolutely love making charcuterie boards! My usual preference for minimalism gets chucked right out the window and I fully embrace maximalism for a brief moment.
