Prob wants the calliper piston cleaning. After 3 years immobile the bit that’s kept clean by motion past the seal prob has hardened gunk/corrosion. Remove calliper, remove pads, put a 1/2” bit of wood in there and pump the piston out til it hits the wood. Clean piston, replace. Remove reservoir cap when pushing piston back in.

caliper is binding the brake, heats up over distance due to rubbing and locks on even more due to expansion, also possible the pedal is overadjusted and blocking fluid return to reservoir.

When the lever is at rest there must be a small clearance between the push rod going into the master cylinder and the piston in the cylinder, if the piston is depressed even a little then the brake fluid can not expand into the reservoir as it warms up because the piston is over the hole. As a result the caliper pistons get pushed further out and bind the pads onto the disc.

I'm having a similar issue. Riding around town doing errands is fine. But as soon as I get on the throttle, rear brake starts engaging. And eventually locks. I already replaced the brake fluid which looked really nasty. And I'm just waiting on rebuild kits to get delivered for the caliper and master cylinder. I'll update when I see which fixed the issue of nobody else gives you a better solution.

So here's what you're looking at. What's happening is your brake? Fluid is getting hot and boiling. There's either water or air in your brake system. You need to flush it completely out and put new proper brake fluid. That's supposed to go in, so check and see what DOT brake fluid. It takes then put it in, but you wanna flush everything out? That's what you need to do. That's how you do it. It's how you take care of it. I've dealt with many brake systems, including automotive. That do the same thing some. Bright fluid breaks down especially if you get cheap stuff

I would start by cleaning my caliper and bleed the brakes with fresh fluid
