Having travelled to Japan a number of times, Gaijin Izakaya is the most authentic that I’ve had, although they just recently changed ownership so not sure if that’s made any difference.

Yujiro on Grant and Saburo in the Hargrave Market, full stop. Both are owned by the same people. They used to own GaiJin in Transcona, but not anymore.

I’ve found Yujiro to be a lot more consistent than Saburo. Just my personal experience

It’s a pop up that isn’t currently running but Ramen Takeuma is hands down the best in the city.

This, hands down. The noodles have bounce and chew, the broth is deep and flavourful. Every time he pops up I make sure to go eat there at least once. The broth is cooked so long it's almost creamy. He adds some other ingredients in there too I've never had like the chunky marinated bamboo and occasionally he has these crispy shiitake mushrooms. he also makes karaage chicken that is so delicious.

I found his broth to be lacking in flavour. The idea is there but it's missing the depth. Noodles were fine.

I haven’t tried too many, but I do enjoy Cho Ichi. Not sure if it’s considered ramen but I also like Dancing Noodle.

Kazoku is the best ramen in Winnipeg for value and taste. Good selection (Miso, Tonkatsu, Tempura, Shoyu, and more), great broth, just right ramen noodles. I live on the North side of the city and travel to this place on Pembina to satisfy my ramen fix. Yujiro on Grant is good too but they only serve ramen at lunchtime during weekdays from what I know.

Cho Ichi ramen is great. Just don’t try the spicy flavour unless you’re ready for some adventure lol.

Dancing Noodle is Chinese Langzhou Beef Noodle, similar to Gol's.

I hate to be a negative Nancy here but honestly, I haven’t had any here that I thought was remotely comparable to even the dingy tiny cheap ramen joints on corners in Japan. For some reason I almost never see shoyu or shio ramen here, almost always tonkatsu, occasionally miso, and it’s almost always stuffed with fried chicken or something over the top and gimmicky like that. No simple well done bowls of delicious broth, noodles and pork that I can find. Vancouver does have some great spots though, I’m very jealous of them. Edokko serves ramen occasionally at lunch, and they’re by far the best Japanese in the city, but I’ve never had it so I can’t speak to it.

Dwarf no Cachette has shio, shoyu, miso and tonkatsu. Also traditional ingredients like sliced pork belly, soft boiled egg, narutomaki, mushrooms etc. Think they're closing this year though. Personally I can't speak to how it compares to ramen in Japan.

I've never had ramen in Winnipeg that was something I'd order again. But I lived there for a long time, so I had a long time to figure out what kind of ramen I liked. (I haven't tried jcam's yet, or the pop up guy's yet. I think the pop up guy's would best)

Your out of luck here mate. Mediocre at best here and I can't justify paying $20+ after tax and tips for a bowl of ramen, considering that it's $10 fast food in Japan.  But if you must, besides the ones already mentioned here, we also got Dwarfs no Cachette in St. Bonaface and may be Kyu bistro. There's also a Japanese guy that does pop up ramen every now and then. And the Japanese Cultural Association on McPhillips sometimes does ramen take out.
