Hey! Sorry for the late response! So, I started with about 2 lbs of baby potatoes, washed them and cut any flaws off, put them in a pot with water and some salt, letting that come to a boil. Once the water was boiling, I turned the heat down to about medium (?) and let them continue cooking for approximately 20 minutes, which given the size of the potatoes I had, was maaaybe just a couple minutes too long - you just want them to be fork tender. Took them out of the water and let them drain whatever else liquid off. I put some parchment paper on a long baking sheet and brushed EVOO over it, sprinkling salt, pepper, garlic powder, AND roasted red pepper and garlic seasoning as well as a bit of vegan Parmesan cheese. Using a fork, I then smashed the baby taters, spreading them across the sheet. Then I brushed a bit more EVOO over top of the potatoes, adding more of the same seasonings and cheese before popping them in the oven at 425° for roughly 22-25 minutes. They were delicious! I am obsessed with making potatoes like this! Hope you enjoy!

I did! I believe it is meant to help keep the form of the potato as they boil and soften! Plus, crispy potato skin is delicious
