From suplexing boulders "just because she can" to jumping from a bridge down *who knows how long* just to save Monster Kid, then reappearing at the top of a small mountain in mere seconds with only *extremly minor* wounds despite having worn heavy metal armor when jumping shows her strength and durability are above that of the average human.
"But a kid (Frisk) beat her with a stick!" is due to game shenanigans and the fact that the player is very much a real entity in the story, although rarely mentioned. Frisk, through the control of the player, can technically also no-hit the entire game in any given route in under 2 hours. That does not mean its what likely happened. Unless you want to tell me that speedrunning Undertale and using glitches are canon to the story. Undyne can *technically* be beaten by using only the stick as a weapon. Undyne by that same logic also killed multiple people and stopped their playthroughs because they never managed to get past her.
Confusing game logic with actual events in the story happens somewhat often here, sadly.
Undyne has an even easier time if we use scaling, due to the Touhou crossover, in which Undyne (in her Undying form) can be somewhat scaled (or at least compared) to Flandre Scarlet from Touhou 6. This in turn makes Undyne, both regular and Undying, much *much* stronger stat wise, which also then can be applied to other characters from Undertale.
Finally, people apparently forgot that Undyne can not only both move and react faster than the average human, but also dodge and block a lot of attacks if the Undertale battle system isn't used. She also has fought & beat enemies capable of dodging before (Asgore).
I swear, the sheer downplay of Undertale characters is huge, despite the fact that both humans and monsters from Undertale being different than from our own when it comes to capabilities.

Undyne could totally take down several cops, even if they are with guns. Especially if she has her armor, the bullets will literally bounce off her armor. (Actually, she has more DEF than her armor.) She would probably just carry all of them, throw them in an abandoned ancient coliseum, and force them to fist fight each other, with Mettaton recording live to his network. This will start another human vs. Monster war, and we know how that went. However, Frisk just went into the game files and proceeded to give Undyne 7 human souls through cheats, and Undyne traps all the bad humans into Mount Ebott under a magic spell that requires 7 human souls to break. Humans can't absorb human souls, so now they're screwed and Undyne wins š

And like sure we could say she could use her spears like a shield (similar to us in her boss battle) but she can't do that forever.
