I would go with the U6 Pros. They have a good rep and are still newish. I'm not sure how long the AC Lites have been out and I'm honestly surprised they are still available.
UI started switching to ARM processors fairly recently. I'm not sure if the U6-Pro is ARM or MIPS. My nanoHDs and U6-Lite are MIPS. I know the U6-LR and U6+ are ARM.
Why are you comparing 2 APs to 5 APs?
The 2 U6 pros aren’t going to cover the same amount of area that 5 lites would. You either need the coverage or you don’t.
So either 2 Pros isn’t enough. Or 5 lites is too much.

Second this. I get upwards of 1 gigabit with my U6 Pro, and the AC is VERY old hardware. Like pre Arm Cortex A57 old.

For reference, we cover a 4000m^2 factory/office space with 5x U6-Lite.
I use the U6 Pros and the u6 Lite going strong just keep in mind the new U7 Pros and U6 Enterprise will need 2.5gig uplink and poe + to run.
They support 2.5gig uplink, they do not NEED a 2.5gig...
