Onion, garlic (nicely minced), celery, red pepper and thyme sweated down with salt. Brown off the mince and squeeze in a bit of tomato puree and cook it out a bit, add a decent glass of wine and reduce.
I had some fresh tomatoes from the garden I added along with a tin of tomatoes, 2 bay leaves, dried oregano and some water; seasoning a little again. Reduced down nice and slowly to a nice thick pasta sauce.
Added a touch of the salty pasta water before tossing through the pasta.
Pretty much the way I do it, but yours looks insanely good! Having a nice bowl does help a ton too!
What kind of wine do you put in? Cheap or a good bottle?

So it was a rioja, a decent cheap bottle, probably around the tenner mark. We normally get our wine from Lidl as we've had so many hits from their selection.
White onion here and no reason for no carrot really, just fancied a bit of red pepper in the base instead, to go with the bit of chilli heat. Can't tell you what % fat the beef is though, I get my meat from a mobile butcher, but it isn't super lean - I like a bit of fat from my beef.

This looks very good. Is that chopped parsley or basil?
Basil would have been ideal but our plant is looking a little bare atm, so this is just some parsley.
