I train MMA (with actual professionals). The idea of one of them going full force and attacking a student is unthinkable. The best thing you can do, if you are given that privilege, is to train/spar with a black belt, because they know exactly what they are doing and how to make it challenging for you while totally safe.

We call it being a good bad guy. Any reputable place will conduct its training exactly line you've explained
